Bruschetta Black Rice Salad


2 ½ cups black rice (cooked)

2 Tbsp olive oil

1 Tablespoon white balsamic vinegar

¼ cup basil (julienned)

1 garlic clove (minced)

1 cup Heirloom tomatoes (halved mini)

½ tsp salt

1 cup garbanzo beans

Sliced mozzarella (optional)


Wash the black rice and soak it overnight or at least for 6 hours.

Cook the rice for 3 – 4 whistles when using a cooker or Cook the rice for 20-25 mins using the open pan method. 

In a bowl, add olive oil, balsamic vinegar, salt, and minced garlic, Mixed Vegetables, Mix them well

Now in a large bowl, add the other ingredients along with the dressing

Mix well and serve them with sliced mozzarella.

Electric rice cooker method:

Wash and clean the rice. Cook it for according to its desired consistency(25-30 mts)in an electric rice cooker.
